So last week, I made several things that were really tasty. But one stood out. Because, even for me, it was bizarre. But it was great.
Pasta with Chicken and Apples
Yes, that’s right.
Make the dressing first: 1/3 cup orange juice, 3 tbsp balsamic vinegar, 1 tbsp dijon mustard and 1 tbsp maple syrup.

Alright. Then gather together 3 cups (measured when cooked) whole wheat pasta, 1/2 rotisserie chicken (shredded) and 1 large golden delicious apple (chopped).

Combine dressing and pasta, chicken and apples. Put it over a bed of spinach and top with a little goat cheese.

We ate it warm for dinner and then cold for lunch the next day. Both were awesome.
