Today is in honor of all the Sarah’s out there. Because I have 2 on my mind today.
1. My friend This girl that I love who used to be in a band called Nickel Creek releases a solo cd today! I am so excited! (Thanks to SaraWatkins.com for the pic!)

2. Like, weeks ago or something, my friend in blogland/real life Sarah asked if anyone out here had a great recipe for white chicken chili. Well, girl, here you go.
Start with 4 tbsp of butter in a a big ol’ pot.

Add a chopped onion. About a cup.

Add 2 cans of chopped chiles.

a tablespoon minced garlic

the breasts of a rotisserie chicken (i hate dark meat), pulled apart (really about 3 cups – it’s all stacked up in the middle)

a box (4 cups) chicken broth

3 cans cannelini beans, drained

1 tbsp cumin, 2 tsp white pepper, pinch of red pepper flakes

let cook for a while. (best would be about an hour, but we can never wait that long.)
top with little tortilla strips and….tah dah!

Ahhh Krissie thank you for this! I am so excited to make this! Once I get back from Seattle I will be making this yummy looking recipe. How many servings do you usually get out of this? I bet it would be yummy with some slice avocado on top. Oh man is it lunch time yet???
