This afternoon on twitter, I shared my need for something new for dinner.
Fat Bridesmaid came to my rescue. She suggested and sent me her fajita recipe. I cannot even begin to tell you how fantastic they are. I am forever indebted. I love ya, girl.
I started with red peppers, green peppers, and onions. I only used 2 of the red peppers.

I cut up all the veggies and put them in ziploc bag. I also had a pound of chicken that were precut into strips. I put them into a separate baggie.

And then the glorious dressing. It began with 3 tablespoons of olive oil.

And 3/4 cup of balsamic vinegar

3/4 teaspoon of minced garlic

the juice of 3 limes

all whisked together!

and poured into the two baggies and then shake! shake! shake!

I put the baggies in a bowl in the fridge. FB suggested they marinade for 30 minutes, but ours was more like an hour. Because it was the perfect time to go to the gym!

Back from the gym, I had to use 2 different pans ’cause neither was big enough on its own. I didn’t put a lot of the marinade in either, but I added it to the veggies as they dried out. I also started the veggies first since there were so many of them. It was about this time when the smell was so good I was almost weak in the knees. Seriously.

I also found this salsa today. It is amazing. It deserves its own picture.

All put together! Little flour tortillas, veggies, chicken, salsa, and a little bit of sour cream. Best. Dinner. Ever.

Oooh. Looks delish. I have been making tons of recipes from The Biggest Loser Family edition cookbook and I highly recommend it if you don’t already have it. Last night I made sweet and sour chicken stir fry and it was SO quick and with only ~5 ingredients or so it was easy too! A few nights ago, I made quick and easy Baked Ziti – also yum. On Easter I made my family Stuffed Peppers – also quick and easy. You should at least browse the book at Barnes and Nobles one of those times you’re grabbing a coffee! ;)
Chrissy, you will LOVE this Barbeque Chicken Pizza!
*2 tubes low fat crescent rolls
*1 cup barbecue sauce (I used Jack Daniels No. 7)
*3/4 lb. chicken breast tenders, cooked and shredded
*3 slices turkey bacon, cooked and crumbled
*1-1/2 cups Kraft 2% low fat shredded cheddar cheese
*1/2 cup low fat ranch dressing
*1/2 tsp. chili powder
*1/4 cup chopped scallions
Directions:
Preheat the oven to 375 degrees.
Roll the crescent rolls out on a pizza stone or cookie sheet (I use a stoneware bar pan). Pinch all seams together to create one large pizza crust. Place in the oven and bake for about 8-10 minutes, or until golden brown. Remove crust from oven and turn on the broiler. Spread the barbecue sauce over the dough. Spread the chicken, then the bacon, and finally the cheese over the top. Place pan under the broiler until the cheese melts (the cheese kind of puffs up), about 3-5 minutes.
In a bowl, combine the ranch dressing and the chili powder. Drizzle the dressing over the pizza with a spoon (or a Ziploc bag with the corner cut off). Top with scallions.
Makes 8 large squares:
