Focus, Krissie. Focus.

So I am a planner. I plan my menus every week, and I try to have a theme. We had a “Martha Stewart FOOD” week, and a “Throwback Week” and a “Cooking Light Week.” This coming week will come from a magazine I bought at Fresh Market.

And I’m asking you for help for the week after (the week I will plan next weekend). I want to have a “Readers Suggest” week.

So what should I cook?

I’m interested in what some of your favorite recipes are. I’m looking for recipes you have already tried – that you know are tasty. I’d prefer they be healthy (of course), but I’ll do my best to make a healthier version of any favorites. I also prefer recipes that don’t require a lot of hands-on time. I’m fine with baking time or cooking time, but prefer not more than 30 minutes of hands-on time. Nutritional info isn’t necessary because I always figure it out myself. I don’t always follow recipes closely, so I figure it out based on the ingredients I actually use. (And if you’re sending me a recipe based on a recipe from somewhere else, let me know so I can give credit there.)

And my promise if I choose your recipe? I’ll shoot you a link (if you have one) and I’ll show step-by-step process photos on the food log blog.

  2. Hey Krissie how about a meatless week? I just started reading your website so I dont know if you are are vegeterian or not but if not it may be a good way to be creative. Keep up the good work!! You look great and are a big inspiration!

  3. I would pick one ingredient and see the different ways you can incorporate it into the meals!

    As for a favorite recipe–this is my go-to. It came on a recipe card my friend gave away. “Easy Everyday Cooking” It’s says to serve with white rice, but I actually like it better with brown rice. (I also leave out the allspice and thyme–only because I didn’t have it the first time I made it and decided it didn’t need it!!!)

    Sweet and Sour Chicken.
    6 T olive oil
    6 T soy sauce
    6 T honey
    3 T white vinegar
    1 1/2 t. dried thyme
    1 1/2 t. paprika
    1/2 t. cayenne pepper
    1/2 t. ground allspice.
    1/2 t. pepper
    4 skinless, boneless chicken breasts
    2 cups hot cooked white rice.
    *Preheat oven to 375. combine all ingredients (except chicken and rice) in a shallow baking dish. mix well. Pierce both sides of each chicken breast and place in baking dish, turning several times to coat chicken.
    *Bake chicken for 30 minutes. Serve chicken over rice and use remaining sauce!

    It was really good, makes four servings ( I love that about RR’s recipes) and reheats well. My chicken was a little tough though, I think I overcooked it. I will use cooked chicken or try the vegetarian alternative the next time. I also used part-skim ricotta.
