Can i make gluten free biscuits with masa flour?

These masa cookies are a wonderful simple cookie for those who are gluten-free. Traditionally they are topped with a sometimes hard-to-find sugar, but I think that might be replaceable with a sprinkling of sucanat or other unrefined

Found masa harina (cornmeal flour)and it is definitely gluten free; corn only. The cookies turned out great! I especially like them with walnuts, but without nuts is very good too. If using convection you can lower the temp to 350 and

sift corn flour. beat eggs with sugar well, until pale and triple in size. add corn flour. mix it with a whisk until fully combined. line 3 baking trays with baking paper. spoon the batter, leaving the space between each portion of the batter – a level table spoon – 12 biscuits per square 30+ cm tray. bake in preheated to 170C fan forced oven.
