It is a family staple now. A note on the gravy: DO NOT DRAIN THE SAUSAGE. You need the grease inorder to bring the gravy together, adding butter will drastically change the flavor. We use red pepper flakes and toss it in as the sausage is cooking. You can also use the "hot" flavored sausage to get an extra layer of flavor.

Over medium-high heat in a large pan (preferably cast iron) heat your oil. Add the sausage and saute until cooked through. Remove the sausage from the pan and set aside for later. Melt the butter and then toss in the sage and crushed red pepper. Give it about two minutes just so the aromatics can crisp up and flavor the grease.
