To whip up a meringue using meringue powder, add 2 parts cold water to a stand mixer and gradually sprinkle in 1 part meringue powder while operating the whisk attachment on high. Whip the meringue until it's dry and forms stiff peaks, about 5 minutes. You need about 1 cup of water and 1/2 cup of powder for 3 cups of meringue.

Meringue powder is made mostly of dried egg whites and can be mixed with water to create a meringue. Cream of tartar is a stabilizer and is sometimes used in making meringue to keep the eggs from collapsing. Some meringue powder already has cream of tartar in it to help in stabilizing meringue.

Oven dried meringue would be 1 (egg white) to 2 (sugar) which is some where in the middle. It needs to bake to hold it’s shape, other wise it would collapse. With this recipe, I would like to create a mixture which is 1 (egg white) to 4 (sugar) that doesn’t need to go in the oven and can dry in room temperature with a slight reduction in size.

Beat all ingredients together until icing forms peaks (about 7 to 10 minutes at low speed with a heavy-duty mixer, 10 to 12 minutes at high speed with a hand-held mixer). For royal icing: Combine 4 cups powdered sugar, 3 tablespoons meringue powder, and 9 tablespoons warm water. Whip using the whisk attachment on medium-low speed until a glue-like consistency form. Whip on medium-high speed for an additional 1 to 2 minutes to make stiff peaks for a thicker icing to construct a gingerbread house.

Place water, meringue powder, and salt in a mixer bowl over a double boiler (explained above). Whisk the mixture until it's sticky and foamy - you want the mixture to resemble egg whites. Add the sugar and continue to whisk over the double boiler until the sugar is dissolved (about 160 F if you have a thermometer).
