Combine flour, baking powder and salt. Using a fork, cut in the butter until well incorporated with flour. Add milk and stir together a few times until the dough comes away from the sides of the bowl. Drop spoonfuls of dough onto a baking sheet or muffin pan. Bake in a 450 degree oven for 12-14 minutes.

Measure your flour into a bowl. I recommend a kitchen scale for this – don’t even need to dirty a measuring cup! PLUS it ensures consistent, perfectly textured biscuits every time. Add in salt and baking powder and stir to combine. Pour milk and butter into the flour and mix until dough comes together.

Create a well in the center of the dry ingredients (flour and butter). Pour the milk in the well and stir, just until the dough comes together and way from the walls of the bowl – about 30 seconds. For the flaky, tender biscuits, do not over mix. Grease or line baking sheet with parchment paper.

If you’d like to play around with making these drop biscuits with self-rising flour, you could try swapping it for 100% of the flour called for in this recipe (both the whole wheat and the all-purpose), omitting the salt, then reducing the baking powder to 1 1/2 teaspoons (do not make easy drop biscuits with no baking powder, or they won’t fully rise).
