Place the dehumidifier in the same room as your baked goods, turn it on, and place it on the highest setting. Leave it turned on until the icing is completely dry. If you don’t have a dehumidifier, turn on the cool air-conditioning instead. This also helps to prevent the icing from losing its shape.

Use an offset spatula to spread a thin layer of frosting over your cake. It should be thin enough that you can see the cake (and crumbs) through it. Don’t worry about visible crumbs, it’s all part of the process! Smooth the icing as best as you can and let it dry until it crusts over, or feels dry to the touch.

Make sure your mixer bowl is perfectly clean and grease-free. Put the egg white into the bowl, turn the mixer on and beat for 30 seconds. Sift the icing/confectioner’s sugar into the bowl together with the rest of the ingredients. Stir with a metal spoon until they are incorporated together (doing this stops the sugar from flying everywhere).
