Grate COLD butter into the dry ingredients with a cheese grater. Stir together until mixture is crumbly. Add buttermilk and mix together, but do not overmix. Roll out dough to an inch thick and cut with either a biscuit cutter or use a canning jar lid.

Folding the dough, like you would a blanket, helps with making sure those buttermilk biscuits have nice layers and depth throughout. You want to fold the dough and roll it out at least 3 times. Start in the center and then roll backwards when rolling out the dough. Repeat in the center and then roll forward.

All you need to make buttermilk biscuits is self-rising flour, buttermilk and butter. If you don’t have buttermilk you can make a substitute with plain milk and either lemon juice or white vinegar. Just put a Tablespoon of one of those acidics in a measuring cup and then fill it up with milk to make one cup.
