Put the zest, fruit, and accumulated juices, along with 4 cups of water and 6 cups of sugar into a large, heavy pot. Stir to dissolve the sugar a bit and bring everything to a boil. If you plan to hot-water process the jars of marmalade, fill a canning kettle with water and bring it to a boil.

Cut the fruit into small pieces or slices and put them in a pot over medium heat. When the fruit begins to boil, lower the heat and let it cook for 20 minutes with the lid on. Then add the sugar, the thinly cut peels slices and cook the whole thing for 40 minutes stirring occasionally with a wooden spoon.

Smear a little bit of marmalade onto a cold plate and check the consistency. If it's not thick enough yet, then microwave it a little longer. While marmalade is in microwave, prepare some clean jars by pouring boiling water over them to sterilise them. When marmalade is finished, ladle it into the jars, up to 1/2 inch from the top.

Sprinkle 1/8 teaspoon of baking soda into the pot. This will help break down the zest and make it softer during the cooking process and release the pectin. Place the pot on to the stove burner and add 4 cups of water to the pot. Bring the mixture to a boil and then turn down to a low simmer.

When the canning kettle water reaches a simmer, sterilize the jars and lids for 5 minutes. Turn it up to a boil and follow the sterilization process. Then fill the jars with the marmalade and place the lids on the jars. Use a jar rack, if you have one, to lower the filled jars into the boiling water in the canning kettle.

To make ginger marmalade, use 3 ½ cups peeled, fresh ginger, 4 cups water, 5 cups sugar, and 1 3-ounce pouch of liquid pectin. Shred the ginger with a box grater or food processor. Simmer in a saucepan with water for 1 hour, until tender. Place in bowl along with ginger liquid to soak for 8 hours, overnight.
