Use a small cookie scoop (1.5 to 2 TBS) to measure out the oatmeal cookie dough. Roll each portion into a smooth ball and place it on a cookie sheet or large plate. Refrigerate for at least 30 minutes up to 2 days. Preheat oven to 350º F (180º C).

Preheat your oven to 350 degrees. In a food processor, put all the ingredients except the coconut oil and pulse about 30 times. Slowly pour coconut oil into the top of the food processor while pulsing until the dough comes together. Measure out cookie balls onto an un-greased baking pan and flatten slightly with your hand.

I did use a little less sugar and subbed a bit of oat flour to replace the reduced sugar. I used 1/2 cup + maybe 2 tablespoons of extra brown sugar instead of 1/4 extra sugar. Going to experiment to see if I can get it down to 1/2 cup without anyone noticing.

ADD peanut butter! This recipe can differ every time you make them. Adding a half cup of peanut butter, and 1/2 cup of chopped nuts, are great options. You can use any type of milk, and I love scrunching up a large size shredded wheat biscuit in place of some of the oatmeal, just before forming cookies. Makes them look more interesting!

You can make a batch of tasty homemade oatmeal cookies without using the brown sugar called for in so many recipes. Mix molasses (or maple syrup) with white sugar or use unrefined sugars instead. Nutmeg can be replaced by mace or allspice, though some recipes don't call for nutmeg at all.
