When the marzipan has dried out, lightly knead the sugarpaste and roll out (to a 0.5cm thickness) on a surface dusted with icing sugar. Once you’ve finished rolling, it is helpful to give it a quick polish with the icing smoother. Brush a little (cooled) boiled water over the marzipan and also the exposed board.

You deserve it. Oh, and here’s the whole lot again in pictures: Brush on the sticky stuff (don’t forget the edges) Roll out the marzipan on cling film. Flop the marzipan onto the cake. Press down firmly and cut off the excess. Leave the marzipan to dry for a couple of days, then repeat with fondant icing.

To straighten the icing/marzipan or fondant, lift it with one hand and smooth it down with the other; this will ensure it doesn't gather together or form any bumps. 25. Dust liberally with cornflour or icing sugar. Knead fondant icing for a couple of minutes to soften, or pop it in the microwave for 10 seconds.
