The cake part of Southern Caramel Cake is not actually caramel flavored; it’s a yellow or white cake that’s there to soak up all the caramel icing goodness. The cake part of today’s recipe actually tastes caramel-y because we’re using 2 cups of brown sugar. And we’re throwing it into a sheet pan to bake so that it’s done in 20 minutes!

Cook sugar and butter for two minutes. Stir in 1/4 cup milk. Bring to a boil; cool. Stir in 10x (confectioner's) sugar, until thick enough to spread. Makes enough for 2 large cake layers. PRINT RECIPE.

This is a wonderfully spicy and aromatic icing which is perfect on a plain white, chocolate or butter cake. I tried it with the banana cake recipe, but the banana cake was too flavorful and overpowered the spiciness. Pair it with a simple cake. Prepare the caramel icing recipe, but substitute light brown sugar.

Spread the reserved 1/4 cup of caramel over the top of the cake layer. Spread 1 cup of frosting on top of the caramel and spread evenly. Place 2nd cake layer face-down on top. Place a generous scoop of frosting on top, and frost however desired! For this cake, I just dolloped the frosting around and swirled it with the edge of a rubber spatula.
